Savoury Red Leicester and Spinach Muffins

For readers who like a little spice, here's a little muffin with a big (cayenne) bite, this little recipe is slightly modified from the Hummingbird Bakery's original.
Ingredients:
360g plain flour
2 1/2tsp baking powder
1tsp cayenne pepper
30g butter (room temp)
1 egg
220ml milk
250g red leicester cheese
1 medium sized red onion
100g spinach
Method:
Sift the flour, baking powder and cayenne pepper together in a large bowl. Next, stir in the butter - the mixture will become slightly pebbly. Then add the egg, milk, and cheese. Stir the batter until it is well mixed. It will have a very sticky/springy consistency.
With a wooden spoon, fold in the chopped red onions. Add the spinach and fold some more until everything is evenly dispersed.
Spoon the mixture evenly into a well floured (or paper case lined) muffin tray.
Pop into the oven at 170C for approximately 35 minutes.
Serve warm or cooled.
